One pan meals, like this delicious sausage sheet pan dinner, are one of my biggest secrets, when it comes to making my family healthy, homemade dinners during the week!

You can’t beat the combination of savory, juicy sausage, and earthy vegetables, like potato, peppers, yellow squash, and zucchini! With all these fresh vegetables, this is one of my favorite recipes to make after a trip to the farmers market!

Kids will love to help prepare this dish, spreading the sausages and vegetables on the cookie sheet before you bake them!

Easy Sausage Sheet Pan Dinner

I am forever looking for a quick and easy dinner option on busy nights, but I also want to serve my family a healthy, homemade meal.

One pan meals have majorly cut down on the amount of takeout that my family eats! 

It doesn’t get much easier than chopping all of the ingredients up, and then combining them in one pan! It also means less dishes, so win-win! 

This Sausage Sheet Pan Dinner: 

  • Serves: 3-4
  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
This easy sausage sheet pan dinner is made from wholesome ingredients, like sausage, yellow squash, zucchini, potatoes, peppers, garlic, and seasonings.

Ingredients

  • 1 pound (16 oz) sausage
  • 5-6 cups vegetables – any you like are fine, we used small potatoes, tri-colored bell peppers, zucchini, yellow squash
  • 2-3 tablespoons olive oil
  • 2 cloves garlic, minced 
  • 1 ½ teaspoons dried parsley
  • 1 teaspoon dried onions
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano 
  • ½ teaspoon black pepper 

Instructions

Step 1

Preheat oven to 400 degrees F.

Step 2

Spray a large sheet with non-stick cooking spray or line with parchment paper.

Do you meal prep and pre-cut your veggies? I find it’s an easy way to shorten my time in the kitchen.

Step 3

Clean and cut the vegetables and place in a large bowl.

Look at all of those vibrant colors. There’s nothing better than a bowl full of fresh vegetables!

Step 4

Drizzle with olive oil and toss to coat.

If you aren’t a fan of dried parsley, dried onions, dried basil, dried oregano, or black pepper, switch it up and combine your favorite spices.

Step 5

Season with spices.

Make this easy sausage sheet pan dinner, and then refrigerate it for up to 5 days for quick and easy lunch and dinner meal prep.

Step 6

Add vegetables to baking sheet.

One-pan dishes are so easy and convenient on busy nights! Having only one dish to clean is an added bonus! *giggle*

Step 7

Slice sausage into 1 inch rounds, add to baking sheet.

Step 8

Bake for 20-25 minutes, stirring after 10-12 minutes, cook until vegetables are tender.

Step 9

Remove from oven and serve immediately.

What I love most about this sausage and veggie sheet pan dinner is that you can tweak it and use whatever meat or vegetables you prefer. It’s fun to switch it up each time you make it!

How To Store Leftover Sausage Sheet Pan Dinner

Store leftovers in the refrigerator immediately, in an airtight container. If properly stored and refrigerated, your leftovers can last up to five days.

This is one of those dishes that tastes even better the next day. After sitting in the fridge, the sausage and vegetables have more time to absorb the seasonings.

Can you Freeze sausage sheet pan dinner leftovers? 

I wouldn’t freeze cooked meat and vegetables, as they will be soggy once you reheat them.

What If I don’T Like Sausage? 

Get creative and use any meat that you want! From chicken, to steak, meatballs, or ground beef, the options are endless!

This is a dish the whole family will love. If you don’t like sausage, you can swap that out for another meat, or just prepare the vegetables!

How to make vegan sausage sheet pan dinner

If you are vegan or vegetarian, you can still enjoy this quick and delicious dish! 

There are plenty of yummy gluten free, plant-based (meatless) sausage options, but my favorite is Beyond Sausage. The taste and texture are so spot on that you won’t believe it’s not real sausage! 

You can also opt to just eliminate a meat option and roast the veggies, too!
